Hayley Glenn
Where do you work?
Roya Restaurant in Glasgow.
How’d you get into the bar / hospitality scene?
Started working in events whilst at college which progressed to bar work in Glasgow. I did my personal license as part of one of the roles and began to realise I really enjoyed it and this was probably my path. From there I began working my way up the operational and management chain and it just felt right.
Your best bartending / hospitality story?
A certain famous singer from Paisley once called in a fake stag do in order to secure a late night booth. We felt bad for them as they had been let down at a stag party. As they arrive, we realise that it wasn’t a stag party at all when we saw said gentleman from Paisley walk in “with their new shoes on”. We were like why didn’t you just say it was you? As the night progressed and it was time to settle up they were all avoiding myself and the staff. Eventually I had to corner them and take payment. When it came to the bill, he said I think you’ll find my name at the top of the charts, and I said … maybe a few years ago mate!
Favourite bar in the world?
Kelvin Grove Café – one of the best cocktail menus in town, a staple to the Glasgow scene.
Favourite way to drink CROSSIP?
In our Fig and Berry old fashioned. – you should make it all year round.
What’s your go-to when drinking at home?
White Wine – Riesling unless it's really sunny… then a Smirnoff ice!
What does UNAPOLOGETICALLY BOLD mean to you?
Unapologetically bold, for me means - to be creative without any limits.
